Butcher vows to maintain market values values of the market

TRADITION is something that is clearly important to Stephen Thompson.

He believes that the tradition of the market place – with its friendly banter, sociable atmosphere and independent store owners – is a British institution, an institution that is typified by the traditional family butchers.

And although just 26 years old, being a butcher is something Mr Thompson knows all about.

He recently took over the premises vacated by RG Ireson in the General Market, having worked in his trade since the age of 13.

Mr Thompson would be the first person to admit that taking on his own business at such a young age is a big responsibility, but it is one that he is more than confident about.

‘It is a big step,’ he admitted, ‘but unless you try it you’ll never know.

There is no point thinking “”what if?” all the time and never going for it.
