ONE of Jersey’s most unique traditions was kept alive over the weekend when volunteers spent more than 30 hours making black butter.

The National Trust for Jersey event at The Elms in St Mary also attracted many onlookers, including many visitors to the Island, who were all keen to see the traditional preserve being made and enjoy the entertainment that came with it.

Many couldn’t resist rolling up their sleeves to help peel apples and tend to the mixture, which had to be stirred continuously.

Black butter has been a farmhouse delicacy in Jersey for hundreds of years and is made from cider apples, sugar, lemon liquorice and spices. Its production has always been a popular community event, with traditional singing, dancing, storytelling and socialising.
